Thanks for asking. Right now there's no setting to turn these off. The "X sold" count, the share button and the heart icon (the "like" button, which adds the product to the customer's wishlist) always show on the product page. We'll add options to hide each of them in the next release.
Until then, you can hide them with a template override, which Solidshop updates won't overwrite:
1. Go to System → Site Templates → [your template] Details and Files → Create Overrides → Layouts → com_solidshop → product. Joomla copies every file in that folder to templates/[your template]/html/layouts/com_solidshop/product/.
2. Open the copy of share_wishlist.php and delete everything below the line defined('_JEXEC') or die;. This removes both the share and the wishlist buttons.
3. Open the copy of stats.php and delete only this block:

Keep the rest of the file, because the Review plugin shows its star rating in the same row.
4. Delete the other copied files you didn't change (card.php, media.php, and so on). Otherwise they stay frozen at today's version and miss future fixes.
If you use the Foundra template, it already has its own copies of these two files in templates/foundra/html/layouts/com_solidshop/product/. Make the same edits there, but a Foundra update will overwrite them.
When the new release is out, you can delete your two overrides and use the new settings instead.
